Valentine Chocolate Box Class

Make your own heart box made of pure chocolate and fill it with homemade delectable truffles! You will learn to make chocolate Ganache and then hand dip your truffles. We will teach the use of transfer sheets to give a colorful pattern to the top of your box and learn a novel technique for making chocolate boxes that can be adapted to other shapes and holidays. Tips on handling, tempering, and storing chocolate will be discussed throughout.  Whether you are a beginner or advanced student, this class will be enjoyed by all who love chocolate!!

Easter Egg Class
We will learn to use colored cocoa butter to beautifully decorate large hollow molded Easter eggs. Plus we will make a standing multi colored chocolate bunny and truffles to fill the large egg. No experience necessary.

Chocolate Tasting
We will offer an informal evening with a presentation of what chocolate is and how it is manufactured.  We will manufacture some chocolate from the bean by hand grinding and mixing. This will lay the foundation for explaining some of the subtleties and differences in various chocolates from different manufacturers and locations around the world. The class will mingle among sample tables where 30 different kinds of chocolate will be available for sampling and comparing. Informal questions or in-depth discussion will be entertained throughout the evening. Endless chocolate!

Spring Confections
This is a hands on teaching class where we will share the recipes and techniques for making an incredible Spring assortment of delights. We will make airy light marshmallows, and a spicy caramelized popcorn treat. Plus we are making hazelnut butter cups (not peanut butter) and a wonderful white chocolate, fruit crispy crunch. Lastly we will close out the afternoon making custom chocolate barks to suite your whims. Then you will pack it all up and take it home to thrill your family and friends.

Chocolate Tasting
This will be an epicurean exploration of the fine and subtle to the gross differences in various chocolates, both domestic and international. Learn the chocolate making process from the bean to the bar with images and examples to show how variances in processes will affect the final taste. Sample and evaluate 15 different chocolates and select 4 to be used in next week's Short Course in Truffle making. We will actually grind our own crude cacao and actually mix and make chocolate to sample and we will make chocolate in the way of the Mayan. Class can be taken individually or in the series.

Short Course in Truffle Making
This is a shortened version of our all day workshop. We will make 4 truffles, using the chocolates picked from the Chocolate Tasting class. We will use different techniques to add flavors to the ganaches using herbs, spices, and liquors. We will make a bar truffle, French, hand dipped and a molded truffle, all to take home at the end of class. Class can be taken individually or in a series.
