Chocolate Truffles
Learn chocolate truffle making. Great for gifts, at a fraction of the cost of the store bought variety and better quality with flavors that suit you. You will make seven truffles using different methods utilizing fresh fruits, oils, nuts and liqueurs. No sugar added, no preservatives. You will temper chocolate, dip truffles and split up the goodies for you to enjoy!

Exploring Chocolate
We will offer an informal evening with a presentation of what chocolate is and how it is manufactured. This will lay the foundation for explaining some of the subtleties and differences in various chocolates from different manufacturers and locations around the world. The class will mingle among sample tables where 30 different kinds of chocolate will be available for sampling and comparing. Informal questions or in-depth discussion will be entertained for the rest of the evening. Endless chocolate!

Learn the art and techniques of making your own chocolate truffles! Learn to temper chocolate, hand dip centers, and use several different kinds of molds. We will make 8 different truffles using methods to flavor the ganaches by utilizing fresh fruits, nuts, essential oils, herbs and spices, and liqueurs. Learn about quality chocolate and make a box full of incredible truffles to take home. Great for gifts at a fraction of the store bought cost and better quality. A full day of chocolatiering for the beginner or for the avid cook.

Red Wines & Dark Chocolates From Around the World [7808]
Spend an evening with a chocolatier and a wine merchant exploring the pairings of fantastic wine with incredible dark chocolates. This is a marriage made in heaven and you are invited to the reception. We will briefly describe the process of making both the chocolate and the different wines and we will help you understand why they are so different from that which you are accustomed to. We have pairings to share plus extras and we invite your palate to the party.
